Italian soup with garlic toasts






First of all, I put maybe a teaspoon full of olive oil in my crock pot and I turned it on to high.

I threw in half an onion, all diced up and I let the onions sweat under the cover of the glass lid.

After the onion start looking trasparent, I added a little diced red pepper.

Cook it all together under the lid of course.

I then thought of quinoa and added just a handful of the little grains.

Next came a couple of pinches of red pepper flakes ( as shown in the picture )


I put some water in my frying pan of meatballs and tomato sauce from yesterday's supper and I mixed it all up in the frying pan, scraping all the flavourful tomato sauce.

Next went in some cooked pasta I had frozen for later use.

I threw in a handful of beef soup powder for taste.


I cooked the whole mixture now on low for a few hours... MMMMMMMMMM that was good!

Don't forget your garlic toast. ( I just bought a loaf all ready to be baked.)

subway style meatball sub













Why pay to go to Subway? It's much more affordable to eat at home.

So why not recreate one of Subway's yummy subs at home!?


I started by grinding the leftover croutons in my bullet.

then I mixed that into my meat with the three egg yokes I have leftover from yesterday's cupcakes.

I shaped my meat into little balls and put them in a lightly oiled frying pan.

I cooked them on medium swirling them around so they would be all brown.

I then added the leftover pizza sauce and cooked the meatballs in the sauce.

I had added some water to the bottle to use it all up but then my sauce was too thin...so I added a little can of tomato paste and it did the trick, it thickened up the tomato sauce a little.


I added a couple bay leaves for flavour.


I chopped up radishes, onions, red pepper and tomatoes all in their own little bowls.

I shredded cheddar cheese and offered grated parmesan cheese as well.

I place everything on the dining room table for everyone to help themselves and make their own meatball sub.

lasagna rolls


This is a good idea for children who are very fussy and won't eat sandwiches.

My daughter is like that, but she loves this simple lasagna roll.


Boil your lasagna noodles, a couple or 4 crisscrossing, in the frying pan full of boiling water.

when the lasagna noodles are cooked, scoop them out of the water and lay them neatly on your clean counter.

Let them cool down so you can handle them.


Fold a slice of ham in half and place the whole slice at the bottom of a lasagna noodle.
( You could also use slices of cheese too )

Start rolling the noodle with your fingers and hold in place with a toothpick.


Put in sandwich baggies and refregerate until you need to pack them for their school lunches.

perogies with bacon and potatoes








Tonight's meal was easy, simple, yummy but FATTENING!!


But once in a while we can splurge..right??


I started with a package of bacon ends and bits....it was cheaper than the usual bacon so we tried it out.

I put my bacon in the frying pan on medium and started cooking them.

I peeled and chopped one potato into bite size pieces and I added it to the bacon so it could cook in the bacon fat.

I boiled about a dozen perogies just until they floated at the top, I scooped them up and added them to the bacon mixture in the frying pan.

I cooked the whole dinner in bacon fat, the fat that the bacon pieces rendered.


As a side dish, I made a simple salad from half a head of lettuce, maybe a cup or so of coleslaw (without dressing added yet), I sliced up a few radishes and there was my salad. That's it that's all.

I put a bunch of different salad dressings on the table so my family could pick and choose the dressing they wanted on their salad.

The blue bottle is a new wine my husband bought me today, it's nice and sweet,...but I only like sweet wines.

bacon wrapped water chesnuts.






I made a stir fry out of the leftover pork patties I cooked yesterday. I sliced the 2 patties into strips and threw them in the frying pan which I had dropped a couple tablespoons of olive oil.

To my frying pan I added some heart of palm, baby corn, bean sprouts, and the leftover water chesnuts from my bacon wrapped water chesnut.

I enptied a whole glass jar of thai sauce into my frying pan


Bacon wrapped water chesnuts:

cut your package of bacon in half, and use the bacon halves to wrap up around a whole water chesnut.

Pierce them with a toothpick each and bake in the oven around 400 until the bacon is the crispness you like.


The bacon wrapped water chestnuts were awesome but the stirfry was just ok, I ended up throwing away the leftovers because nobody in our family would eat the stirfry again.

So half my meal was a success: bacon wrapped water chestnuts.

ground pork patties with vegetables.










I started by peeling a couple of potatoes and dicing them up.

I then put that with a couple handfuls of baby carrots.

I let them boil in some water until they were all tender.

I drained my vegetables and added the can of corn.

I seasoned it with pepper and a little packet of barbeque sauce from McDonalds.

I fried up my pork patties and I put the lid on the frying pan to steam cook them as well.

I can't tell you how long to cook the pork, I don't ever check the time!!

Supper was good, I enjoyed the vegetables after sprinkling them with freshly grated cheddar cheese.

homemade pizza







I made a pizza for supper tonight.


I used gattuso, it's a powder that you add warm water to to make a dough, you then roll it into a flat circle and place that on your oiled pizza pan.


Add your pasta sauce ( mine was leftover tomato beef sauce from a previous meal). and spoon it over the spread out dough.


I added sliced tomatoes and black olives to my pizza.


Then I grated about a cup of cheddar cheese and sprinkled it over the pizza.


I baked at 400 until it smelled ready.( That's how I can tell, I don't refer to times)


I also made a simple salad for supper, a head of lettuce, a few chopped green onions and a tomato diced up.


that's it that's all, an easy meal but a delicious one.
