turkey noodle soup and manicoti



































I'm sorry I got the pictures kinda backwards.

I started my soup by browning a few diced carrots and a couple slices of diced rutabaga.

then I added the leftover gravy from KFC.

I cut up a few slices of turkey and mixed that in.

I mixed in a big glass a tablespoon of chicken soup powder and I cooked all that for a few hours in the crockpot.


the manicoti was made by mixing hamburger beef with some cooked brown rice, red pepper flakes, cayenna pepper and some pickled peppers.

I stuffed every raw manicoti noodle with the hamburger mixture.

I placed each manicoti noodle in a casserole dish and covered it all up with a big can of whole tomato and juice. ( I had previously crushed the whole tomatoes in a bowl)

I covered it all with a thick layer of mozzarella cheese and stuck it in the oven at 350 which I'm gonna cook for at least an hour.

jumbalaya

























I made something like a jumbalaya for tonight`s supper.



First I fried up some sliced mushroom and then I added the leftover hamburger meat from last night`s tacos.



I also had cooked carrot slices that I added with some salsa from yesterdays`meal.


I roasted a green pepper half in the oven because my husband can`t stand the pepper skin, ( same as the tomato skins) and I have to skin all of his vegetables!!


I sliced the pepper up and added it to the jumbalaya.


I cooked some brown rice on the side and I`ll place a spoonful of jumbalaya on a bed of brown rice on our plates.


Oh shit, I added the leftover gravy from Sunday`s turkey supper and I totally ruined the meal!



I`m so sorry, I don`t recommend you try this meal, it`s a total f lop!! Oh well, shit happens!

So Jon went to subway to get us supper. YUM!

Cream of potato and leek soup




































I started by chopping my leek in slices. I then peeled and chopped my 3 potatoes. I halved the potato and diced it that way.

I put my potatoes in a pot of boiling water and I started warming up my frying pan with a little olive oil in the pan.

I sauteed the leek just like I would with an onion.

After draining the potatoes, I placed them in my food processor, I also added the leek


I pulsed the mixture and I added milk to it until the desired consistancy.

I added a lot of salt and pepper and a splash or vinegar as well.

Whip it up once more and there you have it.

lobster tail or cabbage rolls?








Tonight's supper was individual different plates of lobster tail and cabbage rolls.


See, he likes lobster and i don't....I like cabbage rolls and he doesnt.


Firstly I took care of the potatoes because that's what would take the longest time to cook.


I peeled and diced them and threw them in a pot of hot salted water.


Once tender, I strained them and put them in a plastic bowl which I had dumped in grated mozzarella cheese and cheddar cheese and spices.


Once i mixed it all with a dollop of concumber salad dressing, the cheese started to melt and create the yummy stringy blend of cheeses.


I tasted it and loved it and decided to have a hot potato salad instead of the usual cold salad.


I took out yesterday's coleslaw and placed that on our plates.


I cooked the lobster tail in butter and garlic with the lid on so it would fry/steam.


I cooked the cabbage rolls in the microwave by pushing the pizza button 3 times.


so on our plates was cole slaw, potato salad and cabbage rolls /or lobster tail, very appealing!



Our supper was good except I didn't like the cabbage rolls from m&m meats, they tasted old and tinny.


I wouldn't bue it again from them, homemade is definately a better option from now on.


my kitchen



I wanted to introduce you to my kitchen. It's always not quite clean in a little bit cluttered way.

I have my nuwave oven out, our toaster is always out and our tea kettle as well.

I guess I could put away the coffee tin but I'm just not a tidy mind. I can't seem to tidy up my thoughts in my head.

Tonight is a party night.






First of all I went to the liquor store with Chandler and i got my husband's favourite beer: Alpine. I then looked at the red wines when the store lady helped me and I chose a sweet wine named: Rodrigues winery, Strawberry wine 10% alcohol. I bought 2 of them and with jon's beer it came up to just over fifty bucks. I took out half an onion which I diced very finely, I took out half a big tomato which I diced as well. I took out the pita breadsand I shredded cheddar and mozarelly cheese, sliced up half a red pepper. I took out the half of the black olives can I had in the fridge. I took out a previously sliced up cup of radishes I sliced up some salami. All that was to be toppings and fillings to the pita bread halves. On the other shelving of the kitchen, I put out Ritz crackers, other crackers, sliced cheddar cheese, sliced mozarelly cheese, olives, pickled baby onions, pickled sliced peppers, and a platter of mini sandwich from m&m meats not mentioning the bowl of coleslaw and also the bowl full of fresly cut oranges. We haven't had supper yet but I'm anxious to dig in, I love finger foods.

At the last minute I baked a batch of pilsbury dough boy croissants.

Italian soup with garlic toasts






First of all, I put maybe a teaspoon full of olive oil in my crock pot and I turned it on to high.

I threw in half an onion, all diced up and I let the onions sweat under the cover of the glass lid.

After the onion start looking trasparent, I added a little diced red pepper.

Cook it all together under the lid of course.

I then thought of quinoa and added just a handful of the little grains.

Next came a couple of pinches of red pepper flakes ( as shown in the picture )


I put some water in my frying pan of meatballs and tomato sauce from yesterday's supper and I mixed it all up in the frying pan, scraping all the flavourful tomato sauce.

Next went in some cooked pasta I had frozen for later use.

I threw in a handful of beef soup powder for taste.


I cooked the whole mixture now on low for a few hours... MMMMMMMMMM that was good!

Don't forget your garlic toast. ( I just bought a loaf all ready to be baked.)

subway style meatball sub













Why pay to go to Subway? It's much more affordable to eat at home.

So why not recreate one of Subway's yummy subs at home!?


I started by grinding the leftover croutons in my bullet.

then I mixed that into my meat with the three egg yokes I have leftover from yesterday's cupcakes.

I shaped my meat into little balls and put them in a lightly oiled frying pan.

I cooked them on medium swirling them around so they would be all brown.

I then added the leftover pizza sauce and cooked the meatballs in the sauce.

I had added some water to the bottle to use it all up but then my sauce was too thin...so I added a little can of tomato paste and it did the trick, it thickened up the tomato sauce a little.


I added a couple bay leaves for flavour.


I chopped up radishes, onions, red pepper and tomatoes all in their own little bowls.

I shredded cheddar cheese and offered grated parmesan cheese as well.

I place everything on the dining room table for everyone to help themselves and make their own meatball sub.
